Want a sure fire way to impress someone? Make them mashed potatoes. Have you ever met some on that doesn’t like mashed potatoes? If you have they are weird and you should not associate with them.
With Valentine’s Day coming up I thought it would be great time to share these, it would go perfect with any valentine’s day dinner.
The secret is one of two things:
Dry out the potatoes
Put the potatoes through a sieve (of some sort)
To Serve Four to Five:
Peel four potatoes and wash
Slice along the wide side of the potato about 1/2 inch thick (I have tried to slice my potatoes really thin thinking I was saving time, but in the end they ended up being so small and absorbing all the water, they were gross to say the least.)
Place sliced potatoes in large sauce pan or stock pot. Cover with water and lots of salt (like the ocean) and place on stove to boil
When potatoes are tender (a fork pierces through them well and easily) drain in colander
Return potatoes to pot and let all the moisture evaporate from the potatoes. You are drying the potatoes out.
Take the dry potatoes and place through either a sieve, a china cap or what I have used many times the bottom of a colander, in desperate measures I am have even used a grater. The point of this is get all the lumps out. They are going to look like little potato hairs. Sure you can use a food processor, sure you can use a blender, sure you can just whisk them. BUT nothing will get them same effect. With a mixer or food processor you risk the potatoes becoming gummy and with just a whisk you have two many lumps.
Place 1 and 1/2 cups milk and 2 tablespoons butter in small sauce pan and melt together.
Whisk potatoes and a butter mixture together and season with salt and pepper.
