This is a fun and interesting salad for any night of the week.

I like my ratio to be about 1 part radicchio, 2 parts Apple and 2 parts Watercress!  I love to add goat cheese and buts for an added bonus!



Chop Radicchio into thin strips

Wash and Dry

Heat Bottom of Skilled in Olive Oil until Hot but not smoking

Add Radicchio cooked until soft and LIGHTLY browned, Let Cool

Wash Watercress Toss in Olive Oil and Lemon Juice Season To Taste

Slice Pink Lady or other Variety Apples

Add Apples Watercress, Radicchio to Mixing Bowl and Toss, Season to Taste

Add Goat Cheese or Nuts if Desired
