These are the simplest and most classic tea sandwich.

For this event I used homemade focaccia bread, but anything thing from white bread to crackers will work.  The salad is also good just on its own.

Recipe:

The trick is to “salt drain” the cucumbers (thanks mom 🙂 )

Slice to large organic cucumbers and place in colander with bowl underneath.

Toss the cucumbers in heavy salt

Let drain for as long as possible.  If you plan ahead you can leave the cucumbers draining in the fridge overnight.

Place 1/2 creme fraiche, 1/4 cup good mayonnaise, juice of half a lemon,  one bunch chopped fresh dill and salt drained cucumbers into mixing bowl and lightly toss

Adjust seasoning and ingredients if desired

Keep in fridge until serving
