Homemade pizza is so good it is not fair.  Once you go homemade you cant go back.

The other day I made some pizzas for the girls at Michele’s.  I used Chez Panisse’s recipe for the pizza dough, out of the Art of Simple Food (the best cookbook ever made).

You can get really fancy with things like prosciutto, figs, arugula, but then there are some times when you just want a loaded cheesey pizza.  Even when you are going for the more traditional you can still highlight them by using things artisan pepperoni (yes they make it and it is so good I accidentally ate a whole bag on the way home once and had to say I forgot it)  really good goat cheese and local organic vegetables! 🙂

Here are some things to use:

Roasted Peppers

Grilled Onions

Olives

Goat Chesse

Mozzarella

Parmesan

Basil

Pepperoni

Soy Chorizo

Pepper Jack

Tomato Sauce:


3 large heirloom tomatoes diced or One Large Can Organic Tomatoes

3 cloves garlic chopped finely

1 shallot chopped finely

1/4 cup red wine

Olive Oil

Handful of Basil Leaves

Salt and Pepper to Taste

Sautee Shallots and Garlic in Olive Oil until shallots are soft and translucent

Add Tomatoes and Wine

Let Simmer For 30 Minutes

Remove from Heat and let Cool

Place in Blender with Basil

Season with Salt and Pepper
